Rasmus Skov Olesen
I was a PhD fellow at the Department of Geosciences and Natural Resource Management, University of Copenhagen in Denmark, during the period 2020-2024. My PhD project aimed to uncover linkages between forests and rural people’s dietary quality in Tanzania. I was able to show how forests contribute important micronutrients, such as vitamin A, iron, and zinc. Based on my PhD project, I was selected as a finalist for the national Danish PhD Cup.
